My Great Escape!

Mr. Flu Bug moved into my house this week. I have donned a uniform of yellow rubber gloves, running shoes and a frazzled facial expression that makes you wonder. . . crazy person? or mother with sick kids?

So I grabbed The-Prince-Of-Poopness and we ran away.

Come on, little buddy. Let's get outta here.





Out the back door and into the woods. The sugar maples, in all their glorious vanity, took my mind off the thermometers and half-eaten Popsicles and left me feeling renewed and ready to fight onward.

They didn't turn their usual red, orange, yellow. This year they opted for the 'gold' look.

He spritzes water into the hot wood-fired oven to make steam for a crispier crust. You could put a pan of boiling/steaming water into the kitchen oven for the same effect.

Less oil/shortening can help make a crispier crust.

He's also babbling about how the sour performs better if you make a sponge with it. (Uh oh, now you've got him started!) Mix 1/2 starter and 1/2 water in a mixing bowl. Add yeast, salt, sugar, shortening/oil. (He recommends olive oil.) Mix in 1/3 amt of flour you'll use for your recipe. Let it sit while it bubbles and foams. Mix in remaining flour to desired consistency (not necessarily by weight), semi-stiff dough, low speed, then higher speed mix x 10 min. to build gluten.

Then he sez if you're kneading it by hand, that's a whole 'nother beast.

French bread will hold its shape better if you make a stiffer dough. Just roll it out skinny and you should get a skinny loaf, as long as the dough isn't too loose.

Oh, here he goes again:

If you store your starter in the fridge, take it out and feed w/ warm water and flour, then let it sit x at least 1 hr before using. Gives it a chance to rejuvenate and be more active.

Water used to start the batch can be hotter if the starter is cold. Optimal temp for the yeast is 100º.

(does any of this help/make any sense or is he just a babbling baker? maybe we should ask him about DPNs vs. circs?)

Saw your comment on livnletlrn about needlebinding. It's also called nalbinding and I have a book, if you want to borrow it. It reminds me a little of macrame with a needle. Little half hitch knots, all interlaced.
